They are scarce and difficult to capture, as they inhabit on rocky areas with strong waves, posing a great risk to their collectors, the “bites”; for this reason, they are one of the most appreciated and valued delicacies of Galicia
Once cooked, they are separated one by one and thoroughly cleaned; once sorted by size, they are “peeled,” retaining the nail and maintaining the appearance of an original barnacle
